Two SUPER EASY Meal Ideas (For Busy People!)


I don’t know about you, but I’m busy as hell and don’t typically have time to prepare gourmet meals.

Or, when I’m not busy, I’m lazy because I’m exhausted from being so busy.

And I like TV.

I like TV more than I like cooking.

Anyway, as most of you know, even though I like TV more than I like cooking, nutrition is still very important to me. And because of that, I’m always on a quest to find simple yet healthy meals to feed my kids.

Today I bring you one of their all-time favorites, and it’s so easy that this post serves more as a “hey, here’s an idea that you’ve probably heard of but totally forgot about” reminder, rather than an actual recipe.

English Muffin Pizzas

What you will need:

Amounts will vary depending on how many you want to make

English muffins

Sauce

Cheese

Pizza Seasoning

Veggies or meat of your choice (optional)

I find that I can get my kids to eat more vegetables when they are involved with the cooking process, rather than when I just simply plop something green down on the plate in front of them, so for this meal I let the kids do most of the cooking. I pre-customized the sauce, meaning that I took store bought sauce and added spinach and onions to boost the already decent veggie factor, and then I set all the ingredients out for the kids to commence making their own meal.

I put the English muffins (gluten free for us) on a plate with a little pile of cheese (dairy free cheese for The Boy Child), and gave them each a bowl of sauce.

First they spread the sauce on.

Then they seasoned it with pizza seasoning.

Lastly they put the cheese on. (If you want to add chicken or sausage or anything, put that on before you put the cheese on, I just didn’t have anything available that night).

I then popped them in the oven at 425 for about ten minutes.

And wha-la! The Girl Child’s looked tasty, and The Boy Child’s… definitely looked like we had used dairy free cheese.


Either way it was a big hit and super easy. Maybe next time I’ll add some peppers or some chicken or something.

Or maybe I’ll stick with easy and watch a little more TV.

Open-Faced Breakfast Sandwich

Since I promised you two meal ideas, here is another common sense idea that I whipped up the other morning when I got tired of making the kids waffles and omelets for breakfast.

It’s basically just a poor man’s breakfast sandwich, as it was born out of the need to pull together the remaining contents of our freezer when our food stamp budget ran low!

What You’ll Need

Waffle

Egg

Tator Tots

Cheese

Recipe

First I toasted the waffle. In a toaster. Mostly because I don’t know how to do it any other way.

Next, I cooked the egg. You can really cook it any style that you want, but my kids would freak at the sight of a fried egg yolk, so I chose to cook theirs like I would cook a very thin omelet. This worked well and I was able to fold it over a few times on top of the waffle. To do that, beat the egg and then pour it into an over sized pan. Then don’t stir it, just let it cook until it’s semi-solid. Then flip it over and cook until it’s not drippy anymore.

Take it out of the pan and fold it on top of the waffle.

I then put a little cheese over the egg, and used the cheese to stick a few microwaved tator tots on top.

I paired it will some fruit and it was gone before I finished washing the pan!
